Home-made Granola is a sumptuous addition to plain yoghurt, great additions for parfait and can be eaten as a quick handful of nutritious snack. Use B.Barefoot ethical honey to enrich your granola with the goodness of nature.
1 cup old-fashioned oats
1/2 cup raw and slivered mixed nuts (almonds, hazelnuts, pecans, walnuts, pistachios, etc)
1 tsp crystallised sea salt
1/4 tsp cinnamon powder
1/4 cup melted coconut oil (or any nut oil of your choice - groundnut, sunflower, etc.)
1 tbsp B.Barefoot honey
1 tsp. Vanilla extract
1/2 cup chopped dried apricots, cherries, cranberries, raisins, shaved coconut flakes, etc. (optional)
Cacao nibs/semi-sweet chocolate chips for sprinkling (optional)
Our best recommendation: plain greek yoghurt, homemade granola, fresh strawberries, chopped mangoes/bananas, chia seeds and a drizzle of honey.
Follow the steps to make your own granola.
Preheat the oven to 180° celsius and place a sheet of parchment paper on the baking sheet pan.
In a large mixing bowl, combine the oats, mixed nuts, salt, and cinnamon and stir thoroughly.
Stir in the oil, honey and vanilla and fold evenly so that the dry ingredients clump together in clusters. Spread them out on the parchment paper evenly and bake for 25-30 minutes, stirring lightly. They should become lightly golden on the surface.
Let it cool down on the sheet pan and mix in the chopped fruits and cacao nibs.
Store in an airtight container at room temperature, will last up to 2 weeks.
